Benifuuki Green Tea

The cultivation process for Benifuuki, cultivar, was originally intended to produce black tea. The oxidizing process of making black tea destroys o-methylated catechins. 

Like most Japanese green teas benifuuki has multiple flushes throughout the growing season. The level of catechins are found to be higher in the second flush than first flush. Benifuuki green tea contains the highest level of o-methylated catechins of all the Japanese teas.

For those looking for help in easing pollen allergies, Benifuuki is is rich in O-methylated catechins (epigallocatechin-3-O-(3-O-methyl) gallate (EGCG"Me) and epicatechin-3-O-(3-O-methyl) gallate (ECG3"Me)) and may help.
