Organic Sencha produced in Shizuoka put through a certified single strain of black koji-powered fermentation process inspired by the traditional Japanese sake, miso, soy sauce and Shochu making.
After the fermenting process is completed, the tea is steamed to kill the koji spores and then heat-dried to prepare it for packaging.
Dark dried leaves produce a very smooth, amber–like liquor. It is unique, floral, woody and sweet, yet very gentle and clean.
